Ethos

The primary drivers at the heart of everything we do here at Tempus revolve around the core concepts of sustainability, place and community. From the early stages of design and construction, to the products we serve on our menu, right through to how we process waste, we strive to do the best we can by our community and the environment. We choose to primarily source products from suppliers who have a keen focus on sustainability to ensure that our supply chain supports our vision and we utilise every aspect of these products to minimise food waste going to landfill. We dehydrate, powder, preserve and pickle any excess food where possible to put back on the menu, and when we can’t this food goes into our worm farm and compost to help feed back into our herb garden.

We feel incredibly fortunate to be able to operate in our stunning home of the Blue Mountains; a place we are passionate about enjoying as well as preserving. We recognise where we stand in the timeline of this space and look forward to honouring it’s history while we help to build its stories into the future.
